HOLIDAY BREAKFAST IDEAS

Candied Bacon and Pancake shapes!
Since I keep finding awesome tricks for cooking I figure try these for a christmas breakfast
FIRST THE BACON! I have seen several versions of this. The epic mealtime version which they do with almost EVERY meal. Epic Meal Time Candy Bacon WARNING, NSFW language and such

They are all fairly easy, brown sugar and cinnamon mix, bake in the oven, and such. Cook until crisp and make sure its all coated well. I like making the candied bacon, OR cooking it wrapped around my muffin tins to make bacon cups and cook my eggs in Via "One Man'ss Blog" (you can put cooked eggs in it such as scrambled or use it to cook an egg etc. (Ie once the cup is cooked flip the muffin pan put the bacon cup in the hole, crack an egg in it and cook.) OR fill with mini salads, or mac and cheese, the possibilities go on.



ANYWHO, onwards to the pancakes!

Take your cookie cutters, whatever holiday shapes they are. If they are metal or have the metal part on them that is fine. IF they are rubber here is a neat trick you need to know.

Take your plastic or rubber cookie cutters and use tinfoil to wrap them, this is for a heart cookie cutter, similar ones with simple shapes can be used. Otherwise if its too much work, just stick to what you can.

IF YOUR COOKIE CUTTERS ARE THE PLASTIC/RUBBER that is created to withstand being cooked then disregard the tinfoil option!
DON'T FORGET TO spray your cookie cutters with cooking oil so the pancake batter doesn't stick!

Take your pancake batter and get it ready, everything you would do to prepare your pancakes and such, but instead of just pouring the batter in the skillet or on the griddle use the cookie cutters instead for shapes!



 As seen some of the new cookware is done with plastic that can withstand temperatures UP TO 400 degrees or being put on a skillet or griddle. OR in the picture below is a metal cookie cutter but has that rubber edge protection thing.
You can use food colored batter, sprinkles on it, put toppings or fillings in it so when you flip it

The above example is with Nutella, some have suggested chocolate chips, or JUST before flipping, blue berries or chopped fruit.
The cookie cutter is GREAT for cooking eggs too! However the picture here is of items designed specifically for eggs. Most metal cookie cutters work great for eggs.











ALL RIGHT here it is, AN EGG FREE pancake batter recipe!
1 cup all-purpose flour
1 teaspoon sugar 
1 teaspoon cinnamon (OPTIONAL)
2 teaspoon baking powder
1 cup whole milk
1 tablespoon vegetable oil
1 tablespoon water
1 teaspoon vanilla extract
2 tablespoon butter

(NOTE: I say add 2 teaspoons of sugar because when I followed this recipe it still tasted bland, but I forgot to let the batter set for a few minutes)
Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.
Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.
Return pan to stove and stir butter into batter.
When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.
Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.
Note: This recipe also works well with whole wheat flour. Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat.
